What in the world do I do with "soup bones"?

When customers order beef from Ridge Creek Farm, they have the option of getting the soup bones in their package. Most people do not, and we think it's because many people don't know what to do with them. 

So, what do you do with soup bones? You make beef stock! Here are some photos and directions to get you started!

First, lay your soup bones out on a pan. Roast them at 425 degrees for 25 minutes, flip them and then roast another 25 minutes.

When the bones are done roasting, put them in your pot (I use my pressure cooker). Then, scrap off all the deglazed, yummy browned pieces that are stuck to the pan, and throw those in the pot as well. Add in your seasonings! I use salt, pepper, rosemary, onion, celery and carrots. I put 3 pounds of bones and 8 cups of water in my pressure cooker and I cook it for 60 minutes on high pressure.

After cooking, strain the liquid and let it sit in the refrigerator overnight. The next morning, skim the fat off the top and divide the stock into containers. Now, you have homemade beef stock for the next time you make vegetable soup or salisbury steak (to name a few)!
