Copycat Aussie Chicken

I treated my family to Outback Steakhouse... 

Kind of. 

This copycat Aussie Chicken recipe has been a crowd favorite at our house for years, so I thought I would share. It's a great use of Ridge Creek Farm chicken if we do say so ourselves. **Reader Beware: Only make this if you are prepared for your family to demand it at least once a week.**

First, start out with two Ridge Creek Farm chicken breasts. Pound them out until they are flat and thin and then cut them in half, so you have four pieces of chicken. Season with salt, pepper and red pepper flakes.This recipe feeds four technically, but we won't tell if you eat more than one piece!

Next, fry up bacon and when the bacon is cooked through, remove it and set it aside, but leave the grease in the pan, Put the pieces of chicken into the bacon grease and brown it. Then, get out an oven safe dish and layer the chicken, bacon, shredded cheese and your favorite honey mustard.

After it's all layered up, place in the oven at 400 degrees for about 15 minutes, until the cheese is melted and the chicken is cooked through.

Pair this with a spinach salad and some fresh-cut cantaloupe and you've got a show stopping meal!
