I use my electric pressure cooker almost daily, certainly weekly. Today, I was able to take two of our RCF rump roasts from frozen to shredded beef in under two hours thanks to my pressure cooker! When you're super busy like we are, easy, quick and healthy meals are a MUST.
Tonight, I will just add mexican seasonings and enchilada sauce to the shredded beef and warm it all in the crock pot. So, when we get in from all our afternoon activities, all I have to do is hand out tortillas and everyone can make their own tacos. Easy, and everyone's happy!
I'll take the left-overs (if there are any after my crowd devours the tacos) and freeze them in one pound packs. I'll pull out this meat on another busy night and use it for more tacos or BBQ sandwiches.
