When strawberries are on sale...

Last week, our grocery store had cartons of strawberries on sale for $1/each!! We love fruit, especially strawberries and since this was an AMAZING sale, I bought 4 flats of strawberries. Each flat has 8 cartons, so I came home with 32 cartons of strawberries. Our whole crew ate 4 cartons before I hardly had time to get them in the door.

I've made strawberry jam and jelly before but the process is very long and you don't get much bang for your buck since the strawberries cook down so much. Instead, I prefer to sugar and freeze the strawberries. It's a quick and super easy!

First, wash your strawberries and cut them in quarters or really however you please. Then, pour sugar all over those bad boys. I use about 1 cup of sugar per carton of strawberries.

Let the sugar set in and then divide the strawberries into quart-size freezer bags and then lay flat in your freezer!

SOOOOO.... now that all of these amazing fresh strawberries are in the freezer, what do you do with them? Well, here's some ideas:

Strawberry Shortcake

Strawberry Simple Syrup for Sangria

Other things we use frozen strawberries for? Homemade strawberry ice cream, strawberry robber and mixed in greek yogurt to name a few!! What is your favorite way to eat strawberries?

Also, at RCF, we strive to limit our amount of waste, which is why our chickens enjoyed these strawberry scraps!
